Rum Tum Pork chops, marinated in Mount Gay Barbados Rum, clove, brown sugar and chilli oil

Chargilled vegetables consisting of aubergine, red peppers, cherry tomatoes and corgettes drizzled with basil oil and served with sour cream and chives

Salads and sides

Rainforest salad of crisp mixed leaves with cucumbers, roasted sweet peppers and tomatoes sprinkled with a garlic and herb dressing

Pineapple sweet potato with black pepper, garam masala and sweet maraschino cherries garnish

Caribbean Rice and peas served with our very own mildly spiced tropical lamb sauce
